Ingredients

  • For Litti:
  • 2 cups whole wheat flour
  • 1 cup gram flour besan
  • 1/2 cup ghee clarified butter
  • 1 teaspoon carom seeds ajwain
  • Salt to taste
  • Water for kneading
  • For Filling:
  • 1 cup roasted gram flour sattu
  • 1 tablespoon chopped green chilies
  • 1 tablespoon grated ginger
  • 2 tablespoons chopped coriander leaves
  • 1 teaspoon carom seeds ajwain
  • Salt to taste
  • 2 tablespoons mustard oil
  • For Chokha:
  • 2 large brinjals eggplants
  • 4 medium-sized tomatoes
  • 2 onions finely chopped
  • 2 green chilies chopped
  • 1 tablespoon mustard oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • Salt to taste
  • Chopped coriander leaves for garnish

Notes

Step 1: Make the Litti Dough
1. Combine whole wheat flour, gram flour, carom seeds, and a bit of salt in a mixing bowl.
2. Mix in the ghee thoroughly.
3. Slowly add water and knead the dough until it is solid.
4. Wrap the dough in a moist cloth and set aside for 20 minutes.
Step 2: Prepare the Filling
1. Combine roasted gram flour (sattu), chopped green chilies, grated ginger, chopped coriander leaves, carom seeds, and salt in a mixing dish.
2. Heat the mustard oil until it begins to smoke before pouring it over the sattu mixture.
3. Combine thoroughly and set aside.
Step 3: Form and Cook the Litti
1. Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit).
2. Make little balls of dough and flatten them.
3. Fill each flattened disc with a spoonful of the sattu mixture.
4. Seal the sides together to produce spherical dumplings (litti).
5. Bake the litti for 25-30 minutes, or until golden brown, on a baking tray.
Step 4: Make the Chokha.
1. On an open heat, roast the brinjals and tomatoes until the skin is browned.
2. Remove the skin and mash the pulp.
3. Heat mustard oil in a skillet and add mustard seeds, cumin seeds, and chopped green chilies.
4. Saute the chopped onions till golden brown.
Step 5: Serve and Enjoy
Place the hot littis on a dish.
1. Top with a large helping of chokha.
2. Garnish with more coriander leaves if desired.
