Ingredients

  • - 2 cups rice
  • - 1 cup urad dal black gram
  • - 1/2 teaspoon fenugreek seeds
  • - Salt to taste
  • - Oil for cooking
  • For Toppings:
  • - Finely chopped onions
  • - Finely chopped tomatoes
  • - Finely chopped green chilies
  • - Chopped cilantro coriander leaves
  • - Grated coconut optional
  • For Serving:
  • - Coconut chutney
  • - Sambar

Notes

Step-by-Step Recipe:

1. Soak:
- Wash rice and urad dal separately.
- Soak them in water and add fenugreek seeds to the urad dal.
- Allow them to soak for 6 to 8 hours, or overnight.
2. Grinding:
- Drain the soaked rice and urad dal, reserving the water.
- Grind them separately to a smooth batter, adding the reserved water as needed.
- Combine the rice and urad dal batters in a bowl.
- Add salt and blend thoroughly.
- Let the batter ferment for 8-10 hours, or until it has doubled in volume.
3. Preparation:
- Preheat a nonstick skillet or griddle on medium heat.
- Pour a ladleful of the fermented batter into the skillet and spread it out in a circular shape.
- Drizzle oil down the sides and on top.
- Garnish with chopped onions, tomatoes, green chilies, cilantro, and shredded coconut as desired.
4. Cooking Instructions:
- Cook Uttapam over medium heat till golden brown.
- Gently flip it with a spatula and cook the other side until thoroughly done.
- Repeat the process with the remaining batter.
5. Serving:
- Serve hot Uttapam with coconut chutney and sambar.
