Ingredients

  • For the Green Chutney:
  • - 1 cup fresh coriander leaves
  • - 1/2 cup mint leaves
  • - 2 green chilies
  • - 1-inch ginger peeled
  • - 1 clove garlic
  • - Salt to taste
  • - 1 tablespoon lemon juice
  • For the Potato Filling:
  • - 4 large potatoes boiled and mashed
  • - 1 onion finely chopped
  • - 1 tomato finely chopped
  • - 1/2 cup boiled green peas
  • - 1/2 teaspoon turmeric powder
  • - 1 teaspoon cumin powder
  • - Salt to taste
  • - 2 tablespoons oil
  • Other Ingredients:
  • - 8 slices of bread
  • - Butter for spreading
  • - 1 cucumber thinly sliced
  • - 1 tomato thinly sliced
  • - 1 onion thinly sliced
  • - Chaat masala for sprinkling

Step-by-Step Cooking Guide:

Step 1: Prepare the Green Chutney.
  1. In a blender, combine coriander, mint, green chilies, ginger, and garlic.
  2. Blend until you get a smooth paste.
  3. Add salt and lemon juice, and season to taste.
  4. Set aside the green chutney.
Step 2: Prepare the potato filling.
  1. Heat the oil in a skillet, then add the chopped onions and sauté until golden brown.
  2. Add the turmeric and cumin powders and mix well.
  3. Add the diced tomatoes and simmer until soft.
  4. Combine the boiled and mashed potatoes, boiled green peas, and salt. Mix thoroughly.
  5. Cook for 5 minutes to let the flavors mingle.
  6. Remove from the heat and set aside.
Step 3: Assemble the sandwiches.
  1. Take one slice of bread and smear butter on one side.
  2. Flip the bread slice and add a thick coating of green chutney.
  3. Spread a layer of potato filling on top.
  4. Layer the cucumber, tomato, and onion slices.
  5. Add chaat masala for an added burst of flavor.
  6. Place another slice of bread on top, butter side out.
Step 4: Grill the sandwiches.
  1. Preheat your griddle or sandwich press.
  2. Cook the assembled sandwiches on the griddle until golden brown on both sides.
