Ingredients

  • For the Chana Chickpeas:
  • - 2 cups dried chickpeas soaked overnight
  • - 1 teaspoon baking soda
  • - Water for boiling
  • For the Masala Spice Mix:
  • - 2 large onions finely chopped
  • - 2 tomatoes pureed
  • - 4 cloves of garlic minced
  • - 1-inch ginger grated
  • - 2 green chilies finely chopped
  • - 1 cup fresh coriander leaves chopped
  • - 2 tablespoons vegetable oil
  • Spices:
  • - 1 tablespoon cumin seeds
  • - 1 tablespoon coriander powder
  • - 1 tablespoon cumin powder
  • - 1 tablespoon garam masala
  • - 1 teaspoon turmeric powder
  • - 1 teaspoon red chili powder adjust according to spice preference
  • - Salt to taste

Step-by-Step Cooking Guide:

Step 1: Prepare the chickpeas.
  1. Rinse the soaked chickpeas completely.
  2. In a large pot, combine the chickpeas, baking soda, and enough water to cover.
  3. Boil until the chickpeas are cooked (about 15-20 minutes). Drain and set aside.
Step 2: Prepare the masala.
  1. Heat the oil in a skillet or kadai over medium heat.
  2. Add cumin seeds and allow to sputter.
  3. Add the chopped onions and sauté till golden brown.
  4. Combine the minced garlic, grated ginger, and green chilies. Sauté for 2–3 minutes.
  5. Add coriander, cumin, turmeric, red chili powder, and salt. Cook the spices for two minutes.
  6. Add tomato puree and simmer till the oil separates from the masala.
Step 3: Combine chickpeas with masala.
  1. Combine the boiled chickpeas with the masala mixture.
  2. Mix thoroughly to coat the chickpeas with the aromatic spice blend.
  3. Add water as needed to reach the appropriate consistency.
Step 4: Simmer and garnish.
  1. Simmer the Chana Masala on low heat for 15-20 minutes to let the flavors blend.
  2. Add the garam masala and half of the chopped coriander leaves.
  3. Stir and let it simmer for another 5 minutes.
Step 5: Serve and enjoy!
  1. Garnish with the remaining coriander leaves.
  2. Serve hot alongside rice, naan, or your favorite bread.
