- For the Bhaji:
- - 3 large potatoes boiled and mashed
- - 1 cup cauliflower finely chopped
- - 1 cup green peas
- - 1/2 cup carrots finely chopped
- - 1/2 cup bell peppers finely chopped
- - 1 cup tomatoes finely chopped
- - 1 large onion finely chopped
- - 1/4 cup butter
- - 1 tablespoon oil
- - 2 tablespoons Pav Bhaji masala
- - 1 tablespoon red chili powder
- - 1 teaspoon turmeric powder
- - 1 tablespoon ginger-garlic paste
- - Salt to taste
- - Fresh coriander leaves for garnish
- For the Pav:
- - 8 pav bread rolls
- - Butter for toasting
Step-by-Step Recipe:
Step 1: Prepare the vegetables.
- Boil the potatoes until soft, then peel and mash them.
- Finely cut the cauliflower, carrots, bell peppers, onions, and tomatoes.
Step 2: Cook the vegetables.
- Heat the oil and butter in a pan.
- Add the chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and sauté for a minute.
- Add the tomatoes and simmer until softened.
- Combine all of the chopped vegetables, peas, and mashed potatoes. Mix well.
- Combine the Pav Bhaji masala, red chili powder, turmeric powder, and salt. Mix thoroughly.
- Cook the mixture over medium heat, mash the veggies with a potato masher.
Step 3: Toast the Pav.
- Slice the pav horizontally.
- Heat a pan or toaster, add the butter, and toast the pav until golden brown.
Step 4: Serve.
- Garnish the bhaji with fresh coriander leaves.
- Serve the bhaji hot, beside the toasted pav.
